9/11 Remembered


9/11 Remembered – Where I was on 9/11…


9/11I remember waking up on the morning of September 11, 2001 to the sound of my son crying.  He was just born nearly 2 weeks ago and he was going through the phase all newborns go through.   Early mornings and late nights.   After checking on the kid, I hastily dressed for work and drove off.   The streets were empty which I felt was odd as I jumped on the highway and headed North.
I decided to flip on the Radio and listen to some tunes to help wake me up.  With dealing with Patrick I was already late so anything to get me going.   Talk radio…  kind of odd since this is the only Hard Rock station in Colorado Springs.  I flipped it to Classic Rock and caught the briefest snippet of dialog “I repeat an Airplane has crashed into the World Trade Center… we will be back to live coverage in a moment.”
I guess I was lucky that I was one of the few people on the road as I am sure I swerved.  Immediately my mind tried to process this information and in the ensuing silence, I laughed.  “Ha ha, this had to be a joke.. they really got me…”  and flipped the radio back to the hard rock station.  Talk Radio.

“What we understand is that Washington has scrambled jets to shoot down Flight 93, the plane heading towards Washington… no wait, we are now being told that Flight 93 has crashed..”
I veered onto my exit and stopped at a light.  The streets again struck me as oddly empty as I waited anxiously for the light to turn.  The broadcaster was now discussing the planes that had crashed into the World Trade Center and how people were hurling themselves out of the uppermost floors of the building to avoid the fire.  I was speechless.
I remember most the confusion.  There were so many different conflicting reports.  The numbers varied and the stories were a mess as people tried to apply reason to a situation that was unreasonable.  This was a plot device for a bad action film.   Terrorists flying planes into buildings.
By the time I finally pulled into my parking spot at work, there was uncertainty about the number of planes, who was orchestrating the attacks, and how many people had died.  There were reports that our military was shooting down  passenger jets, that the White House was under attack. That the Pentagon had been destroyed and that people were hijacking planes.  Some claimed this was all a hoax and claimed our government was behind it all.  Complete confusion.
I sat in front of my pc numbly while I waited for it to boot up.  The whole Helpdesk was speculating on the nature of the attacks.  Work was basically at a standstill and by the time I finally got into the O/S I had enough time to pull up a CNN page (after 15 or so tries) and tuned in to a live feed about 30 seconds before the second tower crumbled and fell.
I was waiting to wake up.   I knew at any moment Patrick would start to cry and I would wake up.
I looked around and everyone on our Helpdesk was glued to their monitors.  The calls started to poor into the Helpdesk as people, just waking up along the East Coast were trying to remote into Corporate but the whole Eastern Seaboard was down and internet traffic, like the rest of the traffic was slowed to a crawl, if not stopped altogether.  For some of us, this became a horrific time as we received calls from people all along the East Coast who had yet to turn on the T.V. or grasp what is happening.
“Thanks for calling ________- Technologies, yes we understand that the Internet is down.  Ma’am, I am not trying to be rude, but have your turned on your T.V.?  No, I am not crazy, please take a moment and turn on your T.V.”
For some of us on the helpdesk it was overwhelming.  There were no words to describe what was happening.  Reason did not apply here and there was no way we could begin to define the hows and whys.  I remember a girl on the helpdesk talking to the Mother of someone who worked in the World Trade Center.  She was in tears as she listened to the reaction of this mother who found out for the first time the horrific news sweeping the nation.
I felt literally like someone was standing on my chest.  We were allowed to leave early from work that day and by the time I finally got home, I remember standing outside in my driveway looking at the sky.  Empty.  The world was oddly quite as the empty skies held no passing planes.  All air traffic was grounded and I knew in my heart that from that day forth, the world would never be the same.
I would like to take a moment and thank all of the heroes of 9/11.  Not only the New York Fire Department and Police, but all of the people who worked tirelessly to support our Country.  To the families who experienced tragedy on a personal level,  I cannot possibly express how much I grieve for your loss.  From the soldiers who fought in our defense to the great people of New York… You are all heroes.   And though these simple words will never express or capture the nobility of your deeds, I wish to thank you from the bottom of my heart .  You set the example and remind me to believe in America and what she represents… and have faith in the people who guard her.

5 Hollywood Movie Remakes not Worth the Bandwidth to Download


Hollywood is completely out of ideas.  There is nothing left.  The well is dry, the bottle empty.   Hollywood needs to put the comic books away, turn off the cartoons, and focus on innovating instead of offering us the same tired old choices.  Hollywood is like a Autistic Six-Year-Old,  Obsessive Compulsive Perfectionist (George Lucas?) who just can’t leave anything alone.  Sometimes perfect is perfect and needs no further help.  Sometimes movies are loved for their imperfections and not everything has to be “dark and edgy” to be exciting.  Hollywood represents the bigger is better philosophy and forgets that “if its not broke don’t fix it” can apply and regardless of how hard you try “you can’t polish a turd” is not just sage advice but a cold hard fact.  Anyways, here are 5 movie remakes that I wish Hollywood would just walk away from.

Red Dawn Movie5.  Red Dawn –  Red Dawn was an ’80′s cult classic that saw a bunch of highschool students (Patrick Swayze and C.Thomas Howell) resort to guerilla warfare when America is invaded by Russia and it’s allies, namely Cuba.  This movie worked because this movie was right at the height of the cold war and Russia was a respected “real” enemy that struck fear into the hearts of many.  Fast forward 30 years and Russia has fallen and the world’s scariest enemy now takes the face of fanaticism and suicide bombings.  The Red Dawn movie remake was originally shot back in 2009 but Hollywood had a slight problem.  There is no common enemy to invade America  in the traditional sense aside from perhaps China and Hollywood, fearing to alienate Chinese movie goers, decided to put the movie on hold.  So for three years it has sat in limbo….
In Red Dawn 2012 they changed the script since Russia is no longer a major player and China partially owns Hollywood, they re-wrote/re-shot the movie using North Korea as the enemy invaders.  I am speechless.   North Korea could not sneak past South Korea and Japan even if it wanted to invade.  Not to mention they do not have the resources or the technology to get here.  No one is afraid of the North Korean army.  Honestly, a better movie would be North Korea invading a grocery store to feed their people.  This movie is going to suck.  It should have just continued to sit on the shelves and we could have lived on with Red Dawn being remembered for what it was.

patriot games movie4.  Tom Clancy’s Patriot Games
:  Jack Ryan should stay a fictional book character at this point.   The problem with these movie is that Jack Ryan has become the batman of the Thriller/Suspense world.  Every movie promises a new and different Jack Ryan and there is no continuity.  Alec Baldwin was in the Hunt for Red October, Harrison Ford – Patriot Games/Clear and Present Danger.  Ben Affleck got Sum of All Fears and now.. the new and improved Jack Ryan… Captain Kirk… Um..  Chris Pine.   This hit or miss casting has caused the Tom Clancy books to largely tank and I am honestly not excited about this movie either.  Chris Pine seems a little young to be playing Jack Ryan but aside from that, if they get him for a few movies, he might be able to grow into the role.
Suck Factor:

ALF Movie3. ALF – Alf the Alien Life Form crash landed on Earth and for 4 years (t.v. run 86-90) brought us cat-chasing mischief while living with an American family, the Tanners.  ALF was a sitcom and as such, I really have a hard time seeing this as a Hollywood movie.  Being a T.V. show it felt like there was always a new lesson to be learnt for the Alien who had to adjust to living life avoiding the government and trying to fit in.  Novel at the time.  But I think if you are looking for a sarcastic alien movie with some slick humor, then the movie Paul does it better.  If you just was a cute cuddly stuffed animal who lives with a family and is full sarcasm, then the movie TED has you covered.  What I am getting at is there is nothing here that makes me want to buy a ticket.  I am not even sure which audience you would be trying to target with this movie.  Maybe the nostalgic 40+ group, but honestly, I don’t know anybody in that age group who would get excited about an 80′s sitcom turned feature length movie.  Sony Pictures Animation has obtained the rights to this movie and are bringing in the original puppeteer Paul Fusco to animate and voice ALF.. so kudos for that at least.
Suck Factor: 
Ghostbusters MovieGhostbusters 3 – Finally Dan Aykroyd is getting a chance to make his swan song movie.  For years Dan has worked to try and get this project off the ground.  Now it appears that Ghostbuster’s 3 finally has a new script (penned by MiB 3′s Etan Cohen) and a green light to make a return to the big screen.  Billy Murray declined on the movie feeling that the screenplay was not very good.  That said, if you cannot convince the main character to reprise his role, regardless of who is writing the movie, then you can’t expect to convince me to buy a ticket can you?
I loved the original Ghostbuster’s movie.  It was entertaining and funny.  For the time, the special effects were terrific and to this day I still offer the odd “twinkie” quote in casual conversation.  I really believe this is a franchise best left on the sidelines.  It had a sequel and it was done. Let it ride gracefully off into the sunset.  I can see this movie remake doing alright at the box office, but I guarantee people will leave sad.  No one wants to watch bumbling old men more likely to break a hip than catch a ghost, chase around a bunch of cgi apparitions.  And even if the movie is a transition movie where the old crew gives way to a younger generation of ghost hunters, if you are missing Peter Venkman (Murray) it just don’t work.  Regardless of the title, without Stantz, Spengler and Venkman it is not a Ghostbuster film.
Suck Factor: 
2 Robocop –  Robocop will make its way into Theaters in 2013 and bring back the tale of Murphy an honest cop gunned down in a dishonest city.  Brought back to life as a cyborg, half-man/half machine, Murphy promises to clean up the streets and the corruption, even while fighting an internal war as his human mind slowly regains consciousness and he becomes self aware.  This awareness allows him to bypass his programming and skirt the mysterious 4th directive.
The new Robocop movie promises to make Murphy more than a mouth as they have redesigned his suit for the latest reboot.  This is a mistake to me as human beings are really defined by our eyes and whats in our eyes.  ”The eyes are a window into the soul”… and with the eyes revealed, Robocop just doesn’t seem as robotic.  In the original movie I never really identified with Murphy as a man until he removed his mask and you could see his face.  This change feels like they are trying to give “face time” to the actor.  (Think Venom in Spider-Man 3).  I am sure this movie will also be a CGI fest which is a bummer as the original 1986 movie used puppets and stop animation for it’s special effects.  Additionally, I loved the campy commercials for and the other things that made the original movie such a classic.   I am wondering if in this age of political correctness if they will change the movie to tone down the drug use and violence?  I am thinking they will shoot for a PG-13 rating which will also kill the spirit of this timeless movie.
Suck Factor: 
He-Man1.  Masters of the Universe –   By the Power of Greyskull…..!!!  Yes, coming soon to a theater near you, Masters of the Universe.  The original Masters of the Universe movie was a 1987 stinker starring Dolf Lundgren as He-Man.  Not really certain which direction this new movie will take.  The original He-Man cartoon took place on the planet Eternia and Skeletor (He-Man’s nemesis) is trying to conquer the world for his own purposes.     Prince Adam, posses a magic sword that transforms him into He-Man when he holds the sword aloft and says, “By the Power of Greyskull .. I have the power.”  He-Man then battles Skeletor and protects the land from his evil deeds.
In the 1987 movie adaption, Dolf Lundgren played He-Man and the movie took place on Earth.  In the movie, Skeletor has finally conquered Eternia after stealing the Cosmic Key from the locksmith Gwildor, which allows him to gain entry to Castle Grayskull. He imprisons The Sorceress within an energy-draining field and her powers are being transferred to him. In an attempt to rescue The Sorceress, the heroes He-Man, Man-At-Arms, Teela and Gwildor are accidentally transported to Earth by the Cosmic Key. Stranded on Earth, they are faced with the task of recovering the Cosmic Key and getting back to Eternia before Skeletor can gain the power of Grayskull, but Skeletor sends his minions to Earth with the mission of beating them to the Cosmic Key, and chaos ensues as the war between good and evil is transferred to Earth.
In 2013/2014 Movie.. well, I know it is going to be filmed in the style of 300, so I am guessing the movie will more like the cartoon.  I personally believe Masters of the Universe promises to be a real stinker.  I get that Hollywood is struggling with new ideas and that they are scraping the bottom of the barrel to come up with ideas and how to make money… but He-Man?  Really?  I am certain they will modernize it and take many liberties  to update the movie, but then why not just start fresh?  If you have an actor (probably Chris Hemsworth) running around in Speedos carrying a magic sword, claiming to have the power, you can’t possibly release this movie with a straight face.  In fact if Hollywood is hellbent on optioning movies from cartoon’s now that the comic movies are running dry, then option a cartoon that has some substance.  Where is my live action Robotech movie?
Chris Hemsworth could absolutely corner the market on blond headed super heroes if he gets this role and at least appeal to the female audience.

Republicans Crackdown on Adult Material and Throw the Election

The Republicans announced today that they wanted anti-obscenity laws  vigorously enforced.  The GOP, citing preservation of “strong christian values” as the current reason for the unrest, have added language to the official platform entitled “We Believe in America” which was released on August 29.  This platform covers everything from abortion, Adult material, to net neutrality as the Republicans identify the future direction of the party.
The widespread availability of adult material has made it harder for a generation of young men to find intimacy with their wives, he said.
“It’s a growing problem for men in their 20s,” Trueman said. “It’s changed the way their brain maps have developed. This is the way they get sexually excited.”
News Flash.. not just men in their 20′s.  I am fairly certain that men in general are not ready to give up their “indiscretions”.  The adult industry is a $10 Billion a year industry and I am fairly certain it is not just “men in their 20′s” who are driving that figure.  In America, hidden behind our “christian values” and “puritan ways” there are a few truths that the Republicans need to embrace if they want to win this election.  1.  Don’t take guns off the streets.  2.  Don’t take illicit material away from congress.  Anyways, full story here.

Introducing Smart Cells – Cyborgs Next

 


robotResearches from Harvard University, Boston Children’s Hospital and the Massachusetts Institute of Technology have grown “self-aware” cells.   The research team placed a network of nano-scale sensors within artifically grown tissues which allow the tissues to chemically and electrically sense what is occuring in the tissue.

Growing the cells in 3d cultures, the team built networks of nanoscale sensores using silicone wires. The networks then measured signals produced by cells deep within the tissue.

This amazes me.  Imagine cells that could measure cell health and report when there is changes.  When they get to the point where they can bio-engineer cells and program them to perform different functions, I can envision the total eradication of disease as we know it.  Imaging a cell that could not only identify bad cells but annihilate cells before they have a chance to harm the body.  The future of medicine will be an amazing place for our children.  Full story here.

I will end this on a funny note.  I really hope the next big thing in biking is not the pedal-less bicycle.  It is bad enough that some bicyclists will take up the road and hog a whole lane, but imagine if the biker was using this.

The idea here is that the biker is strapped in and then runs to build up speed.  When the biker achieves maximum speed, he or she then lifts their legs and glides.  Steering and braking are still very traditional of a normal bike, however the locomotion is complete foot powered. The whole contraption looks uncomfortable to me and I know there is an effort to be green, but biking is already green. Whats next?  Pedal Powered Air Planes?  Full story here.

Bait and Switch: Unemployment Debauchery in Colorado

 
So here is a couple of stories I found amusing.  The first, that Colorado overpaid  128 million in unemployment benefits last year.

And now they are seeking a return on their um…  investment.   The unemployed folks who received the money are being held accountable for the clerical errors.
But wait.. there is more.  It’s not bad enough that these people are having a hard time finding a job and the state is not doing them any favors…

So not only can these people not find work, they now have a bill hanging over their head that I am sure is freaking them out.  On top of that, if they are unable to pay the bill, the state will be happy to garnish your wages when you do find employment.
Something stinks about all of this.  Look, I am not saying that these people are entitled to the overpaid benefits.  In fact, IF they received extra checks and knew they were cashing them, then that is damn near stealing.  However, if these people were being paid to much by the state and the oversight was a clerical error in the calculation, then you are simply kicking people when they are down.

The whole Unemployment Insurance assistance is a mess, just like a lot of other government run programs.   Last year, across the United States, we overpaid 5.1 billion in unemployment benefits.  That’s BILLION with a B.   But for Colorado this seems like an alarming trend.  Last year, it recovered $73 million in unemployment benefits it over paid.  So Colorado has an amazing track record on unemployment.
It’s track record on employment is not much better either.  These people who are still unemployed are unable to find work.  Let’s put this in perspective.  Colorado Springs, which is now nearly as large as Denver is unable to employ some of these same citizens that the Unemployment Department is demanding money from.
The area’s unemployment rate was 9.3 percent in July 2011. The July 2012 rate was just 0.2 percentage points below the record 9.9 percent reached in October 2010.
And the forecast is not positive either.  People in the “know” are finally noticing what the unemployed have been trying to say since May, when Colorado unexpectedly  decided that Unemployment was better and cut State Extended benefits.  
The Colorado Springs economy seems to be “toying” with a recession, said Tom Binnings, a senior partner of Summit Economics, a Colorado Springs economic research and consulting firm.
“The local economy is weakening,” Binnings said. “I anticipate continued weakness this year and a significant hit next year” if automatic cuts take effect in January under deficit reduction legislation passed by Congress last year.
We have known this for a while now.  So where does that leave us?  Well, with elections coming in November, just keep this in mind when thinking about where we’re at and where we’re going.  Because I will say this much, where we’re at sucks and it sure doesn’t look like it’s going to get any better.

Left in the Dark: Censorship in America


Light in the DarkThe once proud beacon of hope is now left in the dark, as Censorship in America threatens the most basic of human values, acceptance. We speak of family values. Core values. Of the Christian way. However, in our efforts to focus on our family and be God Fearing Americans, we constantly take it to far and conventional wisdom takes a back seat to practicality and we find in some ways we are as repressed as some countries in the middle-east.

America was founded on puritan values and our attitudes against nudity is positively medieval. We have such a double standard of what we deem is appropriate that it sends completely the wrong message to our children. We act like keeping our children sequestered in darkness will somehow keep their moral compasses pointed to “wholesome.”

On one hand, we censor everything not considered “art.” We collectively act like Human sexuality and the body is something we should be ashamed of. We act like sex never happens. That nudity is wrong. We lift our noses and pretend we somehow evolved from the most basic of instincts. I say, the human body and sex is art and should be celebrated. We could really borrow a page from Europe and stop acting like the nudity is some how wrong. I am not talking about Pornography or other vulgarities. I agree those pander to the most basest of human emotions and I don’t believe that porn is art. But I do think America needs to go through a renaissance of thought when it comes to nudity.

The human body is really an amazing advancement of evolution and we as a race, let alone a society should not be ashamed of who we are and I refuse to try and sell that to my son.

Somethings RottenIt is this lack of personal and social acceptance that is really hurting America and as long as we continue this path of intolerance, then we will continue to suffer headlines like this from the Washington Post:

Really? We are upset about a naked man in the ocean? If “god” created man, did he create him clothed? This is laughable and again aggressively supports my supposition. Maybe the naked congressman could hook up with the woman recently removed from a Southwest plan for her dress being to revealing? Look at the picture… she is a larger woman and yeah, let’s face it, if she was 20 and had an amazing rack, she is not being told to cover up.

And that is the problem. We have a set of double standards for everyone in America. You can only show skin if you have a perfect body. You can only be a sexual being after you are married in the eyes of god. It feels like since the Janet Jackson Superbowl nip-slip (which wasn’t even a nipple but a pasty) several years back to the most recent headlines, our views of sexuality and the human body are absurdly shortsighted. In fact, I would hazard a guess that this repression has long term measurable effects on statics like perversion and rape. I think, in this, we are products of our own design. Only in America can we take human nature and make it taboo.

I am not arguing that we should have explicit sex splashed across our TV’s. I am arguing we need to have a longer view. I think we will only ever grow into a society of mature, “equal” adults by first acknowledging that people come in all shapes and sizes. People are sexual beings and that the body should be celebrated, not ridiculed. I find myself increasingly incensed over how hypocritical we are. For a country that is supposed to lead the world and set the example for acceptance and freedom, we certainly do spend a lot of time censoring and moderating the most basic of programmed behavior.

So how do you change 200+ years of pointless puritan values and why should we care?

We need to care because as a country, as a society we should strive for an enlightened and evolved sense of being. We claim to be in the information age then it is time to make informed choices. Technology has made the world an incredibly small place and as a race our next revolution needs to be a fight for acceptance.

We need to accept the difference and individuality of people and end the hypocrisy. End the dual sets of standards and stop selling the lie that people need to be this or that to have acceptance. All you are doing is setting the bar for acceptance that for some is unattainable and failure then leads to depression and self loathing. I believe that morality and acceptance can co-exist. I would be mortified if my son hated someone because of skin color, race, sexual orientation, or even worse, simply because they did not fit into some mold that America has made up. And before you ask, yes, I think we need to accept gay marriage and abortion and all the other stuff that people claim is wrong. I accept it because I don’t argue the question of right or wrong or suffer moral ambiguity.

I argue for the right to choose because that is the right choice.

I take an “enlightened” view figuring that YOUR moral compass will guide YOU and regardless if you choose to be something I would not, YOU should have that choice. All that said, if your moral compass points to the belief that the body is a vile, sinful sex craving flesh sack that should be covered at all times or think that swimming nude is somehow a blight on your soul; Than I would argue that you are no different than then the people who believe that a woman should be covered from head to toe and walk six paces behind the man. I posit that this prejudice is just as harmful and evil as that of race and that your tolerance will continue to hold society at odds with itself. If we continue selling to our children that sex is deviant behavior or looking at the human body somehow makes you perverse, then we will continue to push them to this behavior and keep the fires of their curiosity lit….. but at least we will have a light to keep us company, unfortunately it wont be bright enough to lead us out of this darkness or away from the Censorship in America.

The Perfect Steak!

Grilling Perfection! How to BBQ the perfect Steak!

Choosing a proper steak to BBQ can be a daunting task for some.  For me a steak is a thing of beauty and should be chosen as such.  I never choose the cheapest piece of meat for the sake of saving money.  If I am having steak, it is a reward and something that I want to be more than just a meal, but an experience.  You should always buy your meat from a butcher when you can.  Not only will the butcher be able to direct you to the best cuts, but they will even cut to desired thickness.  For grilling, a steak should always be at least 1 inch thick.  Anything less on the grill and it risks being overcooked and tough.

Know your meat!

The USDA grades beef on a number of factors.  Mostly it comes down to marbling and fat content and overall quality.  USDA Prime is the highest grade achievable with less thank 3% of all beef in the United States being graded as Prime.  The other grades are as follows:
  • U.S. Prime – Highest in quality and intramuscular fat, limited supply. Currently, about 2.9% of carcasses grade as Prime.
  • U.S. Choice – High quality, widely available in foodservice industry and retail markets. Choice carcasses are 53.7% of the fed cattle total. The difference between Choice and Prime is largely due to the fat content in the beef. Prime typically has a higher fat content (more and well distributed intramuscular “marbling”) than Choice.
  • U.S. Select (formerly Good) – lowest grade commonly sold at retail, acceptable quality, but is less juicy and tender due to leanness.
  • U.S. Standard – Lower quality, yet economical, lacking marbling.
  • U.S. Commercial – Low quality, lacking tenderness, produced from older animals.
  • U.S. Utility
  • U.S. Cutter
  • U.S. Canner

USDA Prime -

This is the grade of beef that contains the greatest degree of marbling. It is generally sold to finer restaurants and to some selected meat markets. It is significantly higher in price because less than 3% of the beef graded is Prime.  Prime grade beef is the ultimate in tenderness, juiciness, and flavor.

USDA Choice

Choice grade beef has less marbling than Prime, but is still of very high quality. This is the most popular grade of beef because it contains sufficient marbling for taste and tenderness, while costing less than Prime. Just over half of the beef graded each your earns a grade of Choice. Choice cuts are still tender and juicy.

USDA Select

This is generally a lower priced grade of beef with less marbling than Choice. Select cuts of beef may vary in tenderness and juiciness. Select has the least amount of marbling, making it leaner than and often not as tender, or juicy and flavorful as the other two top grades. About a third of beef graded falls into this category.
The rest.. well for grilling should be ignored.  Most of your local supermarkets carry USDA Select, however sometimes you stumble across Choice.  To truly enjoy the best steaks, you will want a prime cut of beef.  You will pay for it, however prime beef is amazing and ranks up there with Kobe in my opinion.  Prime cuts have a big, full, buttery taste that is simply amazing.  Get to know your local Butcher.  The butcher is an invaluable tool for finding not only the best bargains, but also they can point you to the best choices of meat for your money.  For grilling I like the 1.25 inch thick cuts though I will grill anything up to 2 inches.
Now, with Steak in hand we are off to grill it.

Steak Heaven:

Seasoned1.  To Marinade, or Dry Rub?  Honestly, I only marinade if I am using a lower grade of beef.  Marinades can sometimes mask the flavor of the meat.  In most cases I prefer the natural flavor of my steaks.  Your steaks should be at room temperature before grilling.  The best way to season the meat is to brush it down with Olive Oil and crush some fresh garlic onto the tops of each side of the steak.  A generous coating of black pepper and you are good to go.  I typically do this as my BBQ is firing up.
Where is the salt?  Well, I never Salt my meat until serving because Salt draws moisture from the meat.  If you salt it now, all the “goodness” will come to the surface while cooking and leave you with a dry steak.  Nothing is worse than a chewy steak.

2.  My BBQ is pegged out on heat.   You want a really hot fire, remember you are BBQ’ing and not baking.  A hot fire ensures proper sear on the meat.  If the fire is to low, the juices will come out of the meat and you will end up steaming the steak.

3.  When your fire is hot, pour some oil onto a paper towel and lightly drag over your grill to oil it.  Now add the steaks.  You will want to Sear for 2 minutes a side before turning.

4.  After the 4 minute mark, or when you are done searing the second side, you will add the secret spice to push the flavor over the top.  Use a couple whole branches of Rosemary and lay them on the grill.  Turn the steaks over and lay them across the Rosemary, sandwiching the rosemary between the meat and the flame and cook for an additional 3 minutes per side for a nice warm Medium Steak.


Rosemary Steak5.  Remove from the grill and let your meat rest.  Remember the meat will still cook while resting so you need to account for that.  You should let your meat rest at least 5 minutes, or you can follow the chef’s rule of letting meat rest “half” of the cooking time.  This allows the juices to spread even through your steak.  Before serving, lightly salt and enjoy Grilling Perfection!

The Finger Test to Check the Doneness of Meat

Method:

Open the palm of your hand. Relax the hand. Take the index finger of your other hand and push on the fleshy area between the thumb and the base of the palm. Make sure your hand is relaxed. This is what raw meat feels like. (Check this out the next time you have a raw steak to cook.)

Now gently press the tip of your pinky and your thumb together. Again feel the fleshy area below the thumb. It should feel quite firm. This is what well done meat feels like when you press on it. (Check this out the next time you overcook a piece of meat.)

RIP – Music is Dead

Music is Dead


Lately I have been haunted by a soundtrack of the worlds shittiest songs stuck in my head..  It’s as if my mind has somehow latched onto the most craptastic songs it can remember recently and decided that this was going to be my new theme music.  I even wake up in the middle of the night just to hum a few bars of some no-name-song from some one-hit-wonder band who reigns supreme on every station proving that one sort of “blow” or the other still will sway a DJ -  Least that hasn’t changed.
But music as a whole has changed.

I write a lot about the RIAA and online piracy and I really believe that quality of product impacts online piracy and why Apple nailed it with serving a la carte music to the masses.  I don’t want to spend $16 bucks to listen to some asshole wail out-of-tune lyrics about how his girl is a dick-magnet (you really describe your woman like that?) or how this same asshole takes pride in hating his life and spends a whole three minutes bitching about his problems.  I mean come on, its not like Mr. Rockstar is suffering as the record companies throw money, pussy and drugs at this loser to come out and pretend he identifies with the common “joe” who is struggling during this constipated economy.  I have a Theory for this guy…  I posit to you, dear artist that you sound like a string bean being pulled through a chapped ass, and regardless of popular belief, tattoos are not magical and do not grant talent.  Spend some of those buckets of cash on some singing lessons and hire better people to write your  music.  That’s my Theory, and I am sticking to it.

Let me put it this way, when was the last time you bought an album and the whole album, in it’s entirety had more then 3 songs on it you liked?  I am not saying it can’t happen, or it don’t happen, but it is becoming more and more rare.  Think about this, if you were limited to choosing three albums that were released in the last decade, and ONLY three albums to listen to for the rest of your life, could you find three you could live with?

Ever wonder why there were so many more great bands in the ’60′s and do you really think the bands of today will be looked back on with the same fondness?  I suspect that the bands of the 60′s were “closeted” away in hiding because at the time rock & roll was virgin territory and these bad boy rockers were waiting for the chastity belt of the 50′s to unlock and countless years of musical repression to let it’s hair down.  Rock & roll found a collective voice to stand up make statements of change while giving the collective finger “to the man.”  The gauntlet was dropped and these musicians were not afraid to make political statements with their music, regarding war, politics, and current events.  This music helped the people of that generation navigate through the times of war and gave political opposition to the government and effected change.

I mean honestly, with all of the crap we have gone through in the last decade, including two wars, I can’t think of any bands not named Rage Against the Machine, who has made any statements at all.  And that is the problem; and not just with music, but the America that my generation has inherited.  We are a generation of mutes who sit and watch, like sadistic voyeurs, with no collective voice to stand up and demand change.  We see shit happening we don’t necessarily agree with and do nothing but come online and bitch about it while the ship slowly sinks.

We are now left with a depleted talent pool who is just as lost as the rest of us.  One that has no passion and conviction.  I am not saying that making political statements somehow magically gives you talent, I am however pointing out that music used to be an avenue musicians used to voice their passions and beliefs.  Music had a message.  If nothing else, current events were a source of material for them to expound upon.  Whether the message was peace, love, or do more drugs, the musicians then were trying to say something.  Today’s musicians don’t seem to carry that same passion and that message has been lost by their good looks.  I really believe that is what keeps Rap going.  Young, angry kids are making statements that people identify with.

I have a hard time identifying with my chick being a dick magnet.

I think from top to bottom the Industry needs to change.  From how bands are discovered to the outdated business model that the Recording Industry adheres to.  The time when you could pack an albums worth of great music into one record are done.  The well is dried up and the talent is gone.  I am fairly certain the Recording Industry recognizes the depleted talent pool too.  Notice the Industry now spends it’s efforts searching through places like youtube for the next “big thing.”  All of the “So-So-Has Talent” shows supports this theory and the Entertainment Industry spends millions meticulously combing through society searching for the keys to bring music back to it’s glory day.  Until the current cycle of shit music kills itself we are stuck with what we have.

I guess though, at the end of the night what I am hoping for is someone to step up and be a true “bard” of this decade.  Write and sing music that has a message and innovate. The Recording Industry, shame on you for playing it safe and giving these kids free rides to the top.  Stop fabricating music and selling pretty faces when what we desire is talent and people who are passionate about their talent.  Selling me one song for $16 bucks is going to continue to doom your industry and keep these shitty songs stuck in my head.

The Job Delimma

The Employment Quandry
As you might or might know I am desperately seeking employment.  After spending some time in the Hospital last year, I have spent the last eight months or so making my contacts every week.  As more and more time passed and the ever present need for a job increased, my standards of what qualifies as a good job, including pay, has decreased.

Couple in the fact that Colorado was among the 10 states that recently ended state extended unemployment benefits and it really has put me in a bind.  In response to this bind, I have lowered my standards further and am desperately seeking employment.  The reality though is that in Colorado there are not very many jobs and it is a very competitive market.

The hard truth I face though is that I have a mortgage, a car payment and a family to support so there is a very real financial number I must meet to ensure that we keep this standard of life.  I have eliminated everything I consider a luxury, such as cable t.v. and Netflix accounts.  I ensure that lights are never left on and we are not blowing money on things like Fast Food or anything else that is non-essential.  I then took and totaled the remaining bills and came up with a modest number that I need to make from either salary or hourly to survive.

And that number is very modest.  I am an IT Manager and my salaries have been very comfortable for our way living.  We are not rich by any stretch of the imagination but prior to the company I worked for being sold, we lived within our means.

Back in August 2010, the company I worked for was sold to a competitor.  The competitor kept all of us managers on board until we brought them up to speed then they decided to let the management staff go and back filled those positions with their own people.   This left a large group of us unemployed.  The economy was still reeling from the recession and then I ended up in the hospital.  Months passed with doctors visits, therapy, and residual care until I finally got the green light and a clean bill of health.

The dilemma I face as we fight for preservation deals with the job market and potential employers.  The interviews I have gone to focuses on the lapse between my last job and this potential job.  I have had prospects tell me straight out that they would not speak to me because of this gap.  And being an employer’s market where there are so many more candidates than jobs, I am sure they are not feeling the squeeze like I am.

At the conclusion of one interview, I was positive I was in.  It went fantastically.  He was all smiles and he even mentioned that he was looking forward to working with me.  Then he dropped the bomb.  “If it was up to me, I would hire you on the spot.  H.R. saw this lapse in your work history and it brought up a red flag and honestly they think we should pass on you.  I will try to talk to them to smooth it over but -”  But, don’t get your hopes up is how I understood it.

It is the single most aggravating situation for me as I really was in the hospital.  I really did go through months of therapy to get back into form.  Now I am ready to work- no, I NEED to work and something that I can not control is blocking my path.  I even brought the hospital discharge records in hopes it would make a difference, but as of today, it hasn’t.

The whole situation feels almost unconstitutional.  I have never experienced such blatant prejudice before and honestly it is shocking.  Meanwhile, the clock is slowly ticking down and I grow closer to ruin.  The law however is read that the unemployed are not a federally protected group, like homosexuals or people with disabilities so we are not eligible for protection from this sort of selective hiring.  The government has asked that employers not advertise this policy when placing want-ads, however I think it would really be nice if they did.  Time is crucial and I would rather not bother then try to sell ice to a penguin.

So where does that leave me?

You might be thinking there are programs out there to offer aid, and there are.  I just have a complete mental block with requesting aid when I am willing to work.  Hell, I WANT to work.  I have been doing it my whole life and I feel that this is part of why the system fails.  If employers are allowed to be prejudiced and we are pushed to welfare or any other government assisted program when we are capable and willing to work, then it is no wonder we spend so much money as a nation.  Aside from that, I am at a loss.  What would you do?

I don’t need help, I need a job.  If nothing changes I will eventually come to a point where I am forced to ask for help because self preservation will compromise my standards.  I have read some reports where they are considering regulating how people are hired, however I doubt it will be in time to help me.

Lost Heroes

I remember laying on the floor of my grandma's house, running my hands through the shag rug as I flipped the pages of LIFE magazine. LIFE magazine was really a neat magazine. It was larger than normal magazines with bright huge pictures. I remember staring at the picture from the ticker-tape parade for the Apollo 11 astronauts for what felt like hours. Here were men who defied the odds and landed on the moon. Men of solid character that we stood behind and as a country opened our arms and embraced.

My Grandma told me at the time that if I worked hard enough, I too could be a hero like them. It gave me a chance to dream and though I grew up far from being an Astronaut at least I had role-models and for a while, as I played in the yard, I relived the landing and I was an astronaut.

 Maybe it is childhood fantasy but it really put the notion that good always triumphs. Since then as I grew into an adult nothing ever gave me that same sort of hope. Nothing quite brought me back to that young man playing in the yard. I really grew to appreciate ordinary people who managed extraordinary feats.

But times change and as the years passed so to did the time of heroes. The world is smaller now with the advent of technology, and there still seems to be an appalling absence of heroes in the world. I would like to think there is still room for these extraordinary people in the world, but all the evidence points to the contrary. I suspect I am not alone in noticing this. I believe the success of all the comic books turned movies are a direct reflection of us fulfilling a need we might not even understand we have.

 It is pure speculation on my part but I think people want to be taken care of and there is a sense of security knowing these great people are running around solving the worlds problems. People who have the courage and integrity to follow their ideals and see them through. Men and women of great conviction that fight the good fight.

I am not saying there are not great people in the world. There are so many great minds, great speakers and talented people that we know of, it is impossible to not consider all of the other great people who are sitting and writing blogs, or curing diseases, or any number of other equally great things that will never get recognized. People who do little things daily that make the world a better place. These people are surely heroes in their own right but will remain largely anonymous.

Where are the people who could move a nation to tears with words? People who fought for equality and humanity. Men and women who stuck to their convictions and could see beyond today and dream of a future. We need the Martin Luther Kings, JFK's and Reagan's of the world. If you can not call these people heroes then surely you can acknowledge them for role-models. People we can point to as parents and say "you would be doing alright if you followed in his or her footsteps." I do try to be that person for my son, but I want him to follow the examples of people greater than me. When he is in the yard playing I want him to be more than a network engineer. I want him to be so great, perhaps he will be my hero.

In losing our role models we have lost the good part of ourselves. Our children are left to idolize people with questionable intentions. Do you really want them following the Lohan's on the world?

And what about athletes? We have become so forgiving of people with money I think we have come to expect the let down so it is no surprise when a "great" player is discovered to be on steroids. We are immune when we are told that some famous QB might have raped some waitress. We shrug and wonder what sort of year they will have? Knowing that with enough money thrown at the problem, it will go away. The Babe Ruth's and Johnny Unitas's are gone.

Our core values have been compromised. We used to celebrate things that were noble and now we seem bent on tearing these same ideals down. We eat up the personal lives of these people we call stars and drag things out of the past shadows, perhaps forgetting that they too are human and capable of mistakes. I think in this age of technology where we have so much information that it is irresponsible to report every shred of news that can possibly be squeezed out of a subject. Perhaps we should remember that maybe some of the best reporting is that which is not reported.

And Hollywood? Hollywood died when it needed to use scandal to drum up business because they ran out of ideas for movies Actors and Actresses should be ashamed at how they encourage the media and we should be ashamed for feeding them. Tell me, when they went to the Talent Agency for a part, was there an Agency to shoot the future "leaked" sex tape across the hall? When did it become sexy to show everything and leave nothing to the imagination. And talent? Again, when Hollywood had respect, the Stars were stars because they could sing, dance as well as act. They were not simply a pretty smile.

Obviously I am making blanketing statements when I know they don't include everyone. I know Hollywood still has its classy actors and deep meaningful scripts. My point is that none of these can overshadow the brand which Hollywood is marketing currently, so it is hard to identify someone of the current class of stars that I would consider worthy of role-model status. I am not expecting them to be saints but I wish I could point to someone who reminded me of Robert Montgomery or Martha Raye. Both had amazing lives, serving in the war and representing America by helping our troops as well as acting.

 As I father it is my deepest desire that my son becomes everything I will never be. I want for him to succeed in ways I never imagined and I sincerely hope he finds inspirational people who motivate and educate him. He will benefit from having the world at his fingertips and the vast amounts of knowledge at his disposal and it is my sincerest wish that he uses these tools with restraint. It is o.k. to not know everything and enjoy the journey of discovery. It is reasonable to not read what others have done before you but to find and forge your own path. And I hope in his journey that he can again find something lost and find his heroes. As I look around I suspect they will need them.

 In conclusion, I imagine we must look at this in one of two ways. We either acknowledge that heroes exist and are distinguished by ability, courage, and conviction. Champions who move through life with grace and nobility and the fault lies in society for failing to truly rally behind these individuals and give them the credit they are due. Acknowledging them for more then 15 minutes of fame before they are overshadowed by the next big thing.

Or...

There is no room left in this age of convenience and information for the heroes of old and the years of great change are past. We are in a rut as a society and our morals have been compromised. We no longer expect great things from our role-models and in turn we have let our values slip. We have redefined what it means to be a hero and if they should be better than us, we will dig through their past until we can find a way to bring them down to our level, because at the end of the day, we really don't want heroes, we want fallible people who create distraction. These people will only ever be heroes in hindsight when we can look back and recognize them for contributions made after the lights of the media of died.

If this is then the case and heroes simply cannot exist because we are hell bent on destroying them then perhaps we need to look at our morals and what we are teaching or children.

The Division Between the 1% and the Rest of Us.




The Recession Question

The rumor is the recession ended a couple years ago. No one told me. The claim is that the recession officially ended in June 2009. Apparently I missed a couple years of my life because I am one of the 99% that find life a constant struggle. Most Americans are still floundering with underwater mortgages, falling incomes and many, like me are still hunting for that ever elusive job.
But not everyone is floundering. The rich, America’s 1 percent had a fantastic year. Posting gains upward of 93% in the first year of the recovery. And the rest of us? Not so much. According to Emmanuel Saez and the World Top Income Database the bottom 90% lost $127. All told, the top 1% Average income for 2009 was $913,451. The other 99% tallied $41,696 and of that 99%, ninety percent (90%) had an Average income of $29,967. That was in 2009, the year the recession officially ended.

By June 2011 the median household income was just shy of 50k at $49,909(3) falling a total of 6.7% for the year. This is significant because during the recession years, household income only fell 3.2%. To sum that up, even though the recession has ended, household incomes are still falling and the only people making any money are the top 1%. And they are making a lot of it.
The other misconception that unemployment is better, however jobs are down. . Overall, unemployment fell from 9.1 in August of 2011 to 8.2 here in April and yet we are still bleeding jobs. We added just 120,000 jobs in March. On average we need to 150,000 jobs to stay at a medium level . I imagine that the deficit is a direct reflection of people getting bumped off of unemployment and basically just living in limbo. Welcome to my world.

The point in all of this is I really don’t see things getting better. We are told we are turning the corner and yet all I hear from people are stories of hardship and loss. My neighbors were both just laid off last week. Both of them. In the same week. What are the odds?

This is just another tale among many however. The empty houses in my neighborhood tell another tale. I live in one of the bigger cities in Colorado and yet in my neighborhood there are a slew of empty houses. In Colorado, there was one foreclosure in November for every 575 households in the state — making it 11th in the nation in foreclosures. Colorado boasts a population of 5.1 million. 68% of those people own houses (National Average is 66.6%) making the number of foreclosed houses in November 6031. Over six thousand people lost their homes right before the holidays.

The sad truth

The sad truth is that unless something drastic changes, I will never be in the 1%. I will live my life without ever having the sense of security that the upper class enjoys. My life will be a fight and I will go down swinging telling myself that I might not have money, but I have character. Moxie. Embracing the adage, “that which don’t kill me only makes me stronger.”

My issue with this is that people will tell you that if you are persistent you will make it. That everyone has an opportunity to succeed. I ask you now, does anyone truly believe this? Is there not a reason we consider this the Top 1%? If you break it down, that is 1 out of every 100 people make it. One person gets that lucky break. One person opens the door when opportunity knocks. It is staggering to think of all the things that have to go right to climb the ladder into that very elite club.
What separates the Gates and Buffets from the honor role student or the average Joe? In their respective fields do they not work unequivocally? Are the Gates and Buffets geniuses or simply lucky?

The entire message is confused. As society we idolize the rich and infamous, watching their dance through life while dreaming about what we do if we were so celebrated. We make them heroes when in fact, the true heroes are the small people. The country might serve the rich but it is the average person who make the world go round. The trash men, the janitors, and every person who holds and loves their job. Every person who does the jobs that I couldn’t and every person who is sitting there working desperately to keep the pieces of their fractured lives together as they slowly lose everything. These are the people who need to be rewarded.

We need to do the ethical thing and get these people back to work. Appreciate them and reward them financially. Nothing says thank you like a little extra money. Find a way to relieve the worries of losing their homes. Every home lost is another dream broke. Maybe for a while, we need to stop paying the 1% percent and start finding a way to reclaim the other ninety-nine. We need to ease the burden and remember that just because we claim that rope is slack, for many of us, we only feel the noose getting tighter.

Cilantro - Hate Theory


Last night I posted the recipe I made for dinner.   And though I enjoy Cilantro in my Chile Verde, I was surprised when I discovered how many people totally hated Cilantro.  So much so, there is a website I Hate Cilantro that shares users experiences of people who detest Cilantro.  So I did some poking around and it appears that in fact there is some merit to the people who can’t stand the taste of Cilantro.

The theory is that the polarizing effect of Cilantro, Love it or Hate it comes down to genes.  People who hate it commonly think it taste like soap, though this is a common misconception.  It doesn’t actually taste like soap.  When we eat, our noses pick up chemical compounds that are translated into taste.  To test this theory researchers gave Cilantro to identical twins.  In each test both twins either loved it or hated it.  There was never an instance where one twin liked it and the other did not.  The results of this test indicates that this love/hate relationship is genetic.

So if you happen to hate Cilantro and have a twin, it is almost certain that your twin will feel the same way.  If you just hate Cilantro then you are not alone.  A lot of people carry this distaste most notably Chef Julia Child.

The American Dream is Dead...

Today I mourn the passing of a loved one.

This loved one was special because she was known as the land of opportunity.  A land where integrity and daring could could earn you a chance at success and fulfillment of dreams if you but embraced her.  She treated people fairly, though not perfectly.  Over time, the scope of those fundamental ideas grew to embrace us all.  Great men and women, with lofty ideas left their mark on her and in doing so, forever changed her.  She grew and developed as necessitated by need and as with everything that grows, there were errors along the way.  But she changed to accommodate and swore to uphold our rights of equality, giving us the freedom to speak our minds, protecting us from cruel punishments, creating a due process of law,  and ensuring we had the right to arm and protect ourselves.  She fought for our liberties as we fought to uphold her ideals in a world that was not ready for change.

And in that moment of perfect defining clarity, she became a of light in the dark and revolutionized the world.  She was the hopes and dreams of a few that turned into a nation of many.  A nation of mutts where the only pure thing among us were the 9 strongest words ever composed were written and born into law.

“We the people of the United States of America…”  
Words so powerful and moving, they were felt throughout the world.  She accepted all regardless of race or color.  Background or creed.  There was a universal recognition that we were all immigrants and to protect our fragile dream we bled for her.   The cost for our freedom was the lives of the people for which she stood.  And for over 200 years, through conflict internal and without, she was the envy of the world.

But times change and beneath these hopes and dreams there was a corruption that was slowly eating at the core foundations of her soul. Spreading throughout the land, fueled by greed, some will claim that this corruption began when we lost so many innocent lives to an act of terrorism.  In the span of one day we went from the land of the free to the land of the afraid.  The freedoms we lost that day will never come back and we will feel that wound for generations to come.
However, I believe that this is merely the culmination of events where we recognized our vulnerabilities.  I submit to you that in the days that followed, in our haste and fear we gave away many more of our freedoms out of fear.  I further believe the source of corruption began with our forefathers, not on that nightmare morning in September.  We built a country founded on capitalism and gave our allegiance to the dollar.  We created a system of checks and balances but were short sighted with our beliefs.  The age of great men and women is over and candidate values are bought and sold like commodities.  As a society, we allowed media to control our critical thinking and stopped innovating unless it was in the name of war.   We have no more hero’s and there is a great depression that hangs like a cloud over the land.  Our forefathers, perhaps mistakenly believing that men of honor and character would lead us into the future failed to understand that our basic human flaws of greed and wealth created a separation among the social classes who shared nothing in common but the belief it is “never enough”.

The rich never have enough money.  The poor never have enough money.  It’s “never enough” and when it comes to money we are all extremists and this created a division among the classes.  Rich and Poor.

All that said, we must also accept we are not innocent victims and shoulder some of the blame for the death of our country.  We are guilty of inaction.  Of standing on the sidelines as the government walked all over us.  There was a coup after 9.11 and the government used this aura of fear to assume invasive powers.  We were already fighting a war on terror and as cold as it sounds, innocents die.  In the span of a few years, we went to war externally but also waged a media war on critical thought and passed laws to protect the people (patriot act).  Unable to bear the burden of corruption our economy was pushed to the brink and we created stimulus plans to bail out the banks and companies that brought us to the brink of ruin.  People lost freedoms, homes and jobs.  Struggling to survive, we have since compounded the problem by imprisoning our own people for debts.  Bringing back a practice (debtors prison) we had previously abolished in the 1830′s.   But this is a one sided agreement.  I mean, how is it constitutional we must serve time for being unable to pay and yet we have this little thing called…  NATIONAL DEBT.  When do we imprison our politicians?  And for the future?  Well, we must protect our people so in their name we will build large data centers to spy on our people, collecting data from personal emails, to private tweets.  Phone calls to encrypted data and financial transactions. And the list goes on as we face new threats.  Even the internet, the last bastion of freedom is under siege.  The bills ACTA , PIPA, and CISPA are all funded by big money in the name of control and limiting our freedoms.   And thus my friend, I submit to you, that the American Dream is dead.

If there is the potential for someone, somewhere, in the world to commit a crime, and no one will be around to witness it, will America pass a law to prevent it?
